Chewy Peanut Butter Cookies
Our dad has always been the baker and chef in the family which has been passed on from his dad. Our Grandad can whip up a meal from random things in his kitchen in a matter of minutes, no recipe needed! As a frugal girl myself, ( not as much as Shelsea though) I have learned to create something out of nothing in my tiny kitchen as well. Thanks Grandad!
Growing up with my dad always baking his famous cookies for our friends & family - Oatmeal Chocolate Chip being my favorite - has sparked a passion for baking in me. It took me a few years to figure it out, but apparently, baking and cooking runs in the family! :)

Makes about 50 cookies!
Ingredients
- 5 cups flour
- 2 tsp magic baking powder
- 2 tsp baking soda
- 1 tsp salt
- 2 cups butter, softened
- 2 cups smooth or crunchy peanut butter
- 2 cups packed brown sugar
- 2 cups white granulated sugar
- 4 eggs, large
- 2 tsp vanilla
Instructions
- Heat oven to 350 degrees
- Mix flour, baking soda, baking powder and salt together and set aside.
- Beat butter, peanut butter and sugars in a large bowl with mixer until light and fluffy.
- Blend in eggs and vanilla.
- Add flour mixture gradually until all blended together (add 2 cups chocolate chips if desired)
- Roll or portion scoop into 1.5 inch balls onto greased cookie sheet, press downs lightly with 3 fingers.
- Bake 12-15 minutes until golden brown on top, cool and serve.
You won't want to forget a glass of milk with these chewy, melt in your mouth cookies!

*Ginger Sparkle Cookies*
Ever since I can remember, my dad has been baking these cookies, holiday or not. This is why Shelsea and I refer to them as my Dad's Famous Ginger Sparkles. They are always baked to perfection and a great midnight snack!
Makes about 50 cookies!
Ingredients

(Add up to 1/4 cup more flour if needed, needs to form into balls without sticking to hands - this also helps them crack)
Make 1.5 inch balls by hand or use portion scoop and roll in granulated white sugar
*Course raw granulated sugar looks best*
Bake at 350 degrees for 15 minutes
the top should be cracked and bottom brown.
Remove and let cool, then enjoy!
